Vegan Matcha Coconut Milk Popsicles
Ingredients:
- 1 can (13.5 oz or 400 ml) full-fat coconut milk
- 1/2 cup maple syrup (or agave nectar)
- 2 tablespoons matcha powder
- 1 teaspoon vanilla extract
- Pinch of salt

Prepare the Matcha Mixture:
- In a medium bowl, whisk together the coconut milk and matcha powder until the matcha is fully dissolved and there are no lumps.
- Add the maple syrup, vanilla extract, and a pinch of salt. Whisk until well combined.

Fill the Popsicle Molds:
- Pour the matcha mixture evenly into popsicle molds. If you don’t have popsicle molds, you can use small paper cups and wooden sticks.
- Insert the sticks into the molds.

Freeze:
- Place the molds in the freezer and freeze for at least 4-6 hours, or until the popsicles are completely solid.

Unmold and Serve:
- To release the popsicles, run warm water over the outside of the molds for a few seconds to help them come out more easily.
- Serve immediately, or store in an airtight container in the freezer until ready to enjoy.
