Vegan Matcha Coconut Milk Popsicles

 Ingredients:

  • 1 can (13.5 oz or 400 ml) full-fat coconut milk
  • 1/2 cup maple syrup (or agave nectar)
  • 2 tablespoons matcha powder
  • 1 teaspoon vanilla extract
  • Pinch of salt

Instructions:

  1. Prepare the Matcha Mixture:

    • In a medium bowl, whisk together the coconut milk and matcha powder until the matcha is fully dissolved and there are no lumps.
    • Add the maple syrup, vanilla extract, and a pinch of salt. Whisk until well combined.
  2. Fill the Popsicle Molds:

    • Pour the matcha mixture evenly into popsicle molds. If you don’t have popsicle molds, you can use small paper cups and wooden sticks.
    • Insert the sticks into the molds.
  3. Freeze:

    • Place the molds in the freezer and freeze for at least 4-6 hours, or until the popsicles are completely solid.
  4. Unmold and Serve:

    • To release the popsicles, run warm water over the outside of the molds for a few seconds to help them come out more easily.
    • Serve immediately, or store in an airtight container in the freezer until ready to enjoy.

These popsicles are a creamy and satisfying treat with the earthy flavor of matcha. They’re perfect for a hot day or whenever you need a refreshing snack!
